Variedades de aceitunas que se producen en Argentina.
Lejos de ser el hábitat original, nuestro país ofrece un clima ideal para el desarrollo del olivo y ocupa el décimo lugar de países productores de aceite de oliva.
También (algo que muy pocos conocen) dio nacimiento a una especie que podemos llamar como autóctona. El Arauco.
De él, hablaremos en otro post, hoy vamos a conocer qué variedades de aceituna se producen en nuestro país.
A su llegada a «Las Américas» los españoles trajeron consigo, lo que hoy es gran parte de nuestro bagaje cultural.
Entre ese bagaje había varias plantas entre las cuales se encontraban los olivos.
De esos primeros olivos nació una variedad muy conocida y difundida en nuestro país.
Una planta cuyo fruto se consume como aceitunas de mesa y también se utiliza para la producción de aceite de oliva. El arauco.
Para el año 1965, contábamos en nuestro país con cincuenta mil hectáreas plantadas y en la actualidad, ocupa el décimo lugar de países productores de aceite de oliva.
Variedades que se producen.
- Arauco. También conocida como aceituna criolla, es una variedad de doble propósito.
- Picual. De origen español y una de las más difundidas en este país, es conocida también como nevadilla.
- Coratina. De la Puglia, Italia. Junto con el Frantoio, son de las variedades Italianas más difundidas en nuestro país.
- Arbequina. Originaria de Palestina e introducida en España. Una planta de gran resistencia.
- Manzanilla. Cultivada principalmente en Sevilla, está muy difundida en la provincia de Córdoba. Una variedad doble propósito.
- Frantoio. Originaria de la toscana, Italia, es una aceituna que produce un aceite liviano y exquisito. Muy difundida en Mendoza.
- Villalonga. es una variedad doble propósito, originaria de Valencia, España.
- Barnea. Variedad nueva, desarrollada en la frontera entre el desierto de Sinaí e Israel, se utiliza como aceituna de mesa.
- Changlot Real. Variedad de Valencia, España. De vigor medio y alta productividad. Típica variedad de doble propósito.
- Empeltre. Variedad española de maduración temprana y alto rendimiento, ofrece un aceite de sabor suave y un toque frutado. De Mallorca, España.
- Farga: De sabor intenso, bastante amargo y picante. Variedad española de frutos medianos y maduración temprana.
En cada una de las Provincias.
La principal producción de Aceite en nuestro país se encuentra centralizada en las Provincias de Catamarca, San Juan y la Rioja.
Le siguen en orden de producción, Mendoza con mayor producción de Aceitunas de mesa, Córdoba y por último y muy curiosamente, Buenos Aires.
–Catamarca. Su mayor producción es aceite de oliva y sus principales variedades son Arbequina, Frantoio, Barnea y Coratina. El 20% restante corresponde a las de doble propósito, como Manzanilla y Empeltre.
-Mendoza. El 59% de las aceitunas producidas se destinan a conservas, con predominio de las variedades Arauco y Manzanilla. El 41% restante se destina a la fabricación de aceites de oliva, principalmente Arbequina, Farga, Empeltre y Frantoio.
-San Juan. Posee un 60% de variedades aceiteras como Arbequina, Picual, Frantoio y Empeltre, 22% de aceitunas de mesa de la variedad Changlot Real y 19% de variedades de doble propósito como Arauco y Manzanilla.
-Córdoba. Las principales variedades implantadas se reparten entre el 70% destinado a la producción de aceite de oliva (Arbequina y Frantoio) y el 30% destinado a la producción de conservas (Manzanilla, Arauco, Nevadillo, Farga, Empeltre y Ascolano).
-Buenos Aires. La variedad Arbequina es la más abundante, y también hay presencia de Frantoio, Nevadillo y Farga.
