Harina de algarroba Leon de Poncho.
En San Marcos Sierras, provincia de Córdoba existe un emprendimiento que se dedica desde hace ya varios años a la elaboración de infusiones naturales y harinas que se llama Leon de Poncho.
Quien haya pasado por San Marcos, seguramente tuvo la oportunidad de probar los budines de algarroba y miel que preparan Ana y Mork.
O los alfajores de Algarroba de Rocío de Miel, ambos preparados con el harina de Algarroba de León de Poncho.
Este emprendimiento que lleva ya varios años, comenzó elaborando Café de Higos y de a poco comenzó a realizar infusiones con especies autóctonas como el chañar, la algarroba y mistol.
Estas infusiones se venden generalmente en San Marcos Sierras, pero a lo largo de los años a llegado a hacerse muy conocido y actualmente se vende en dietéticas y almacenes naturales de casi todo el país.
Además de las infusiones naturales de higo, algarroba, mistol y chañar, León de Poncho comenzó a elaborar Harina de Algarroba.
Pero…¿qué es la algarroba?
La Algarroba es el fruto de un árbol de ramas tupidas que crece en el noroeste argentino y es considerado por la historia como un árbol sagrado, de sus vainas doradas de preparaba antaño, aloja, añapa y patay.
El origen de su nombre.
El nombre Algarrobo, es una palabra de origen Árabe al igual que mucha de nuestras pertenencias culturales y proviene de indirectamente de los españoles.
Su nombre deriva de la palabra AL KAROB que significa “El Árbol”
En la época de la conquista, lo llamaron así, por ser parecido a un árbol del mediterráneo cuyo nombre científico es Ceratonia Siliqua, al cual los árabes llamaron, durante la ocupación en España, AL KAROB.

Si bien son árboles similares y los dos tienen vainas que se las utiliza también como alimento, no pertenecen a la misma familia.
Si realizas una búsqueda en Google de Harina de algarroba, te vas a encontrar imágenes como estas.
Como puedes ver, las vainas son diferentes a la anterior y como veras mas adelante, el harina de otro color y cuando la pruebes, de otro sabor!
Esto sucede porque son árboles completamente diferentes.
Ahora bien, vamos a redescubrir nuestro Algarrobo.
Los pueblos indígenas del noroeste lo llamaban TAKKU, voz quechua que significa “El Árbol”.
Los guaraníes lo llamaron IBOPÉ: que significa el “Árbol puesto en el camino para comer».
Sus vainas o frutos son legumbres y pueden tener una alta concentración de azúcar, lo que la diferencia del algarrobo español, ya que su fruto es amargo.
Pertenece al género Prosopis y cuenta con más de 45 especies, algunas de ellas en peligro de extinción.
Entre las especies más conocidas se encuentran el Algarrobo Blanco (Prosopis Alba) y el Algarrobo negro (Prosopis Nigra)
Fue considerado un árbol sagrado por los múltiples usos que brindaba.
✔Su follaje le procuraba sombra.
✔El fruto les permitía hacer comidas, dulces, bebidas.
✔ La madera conseguía calor y abrigo.
✔ La corteza brindaba colorantes para los tejidos.
✔ Las hojas y corteza, para curtir y como medicina.
Su fruto tiene una elevada cantidad de hidratos de carbono, mediano tenor de proteínas, hierro, calcio, bajo tenor graso y buena digestibilidad.
Por su alto contenido de azúcares puede ser utilizado como edulcorante; son preferidos para la elaboración del “patay” (pasta harinosa obtenida al moler la algarroba madura y seca en un mortero y pasada por cedazo fino).
Las flores son abundantes y melíferas, con alta cantidad de néctar y polen, que lo convierte en un árbol con valor apícola y la miel de algarrobo es una de las más dulces y azucaradas que yo haya probado.
El INTA (Instituto Nacional de Tecnología Agropecuaria) sostiene que el agregado de valor en las vainas es del 100%, ya que no genera residuos por que se usa en su totalidad.
Cómo se elabora el harina de Algarroba.
Tras su recolección del suelo, ésta pasa por los procesos de tostado y molienda de donde se obtienen semillas, harina refinada y resto de la cáscara.
Con los dos últimos elementos se realiza la elaboración de diversos productos naturales y saludables para la alimentación humana.
La cáscara que queda tras la molienda se utiliza como café de Algarroba.
Y con la pulpa se obtiene harina de algarroba que se emplea para panificados tanto dulces como saladas, por ejemplo galletitas, budines, panes, tortas, medialunas y alfajores.
El administrador de León de poncho, nos explica que para elaborar harina de algarroba, es necesario tostar la vaina para matar de manera natural (y sin venenos o químicos) un «bicho» que se encuentra generalmente en la algarroba.
También nos explica que las vainas que utiliza es de árboles milenarios del desierto y que del proceso final solo queda pulpa de algarroba.

La principal virtud de la Algarroba es extraer minerales de lo profundo del suelo, a través de su extenso sistema radicular.
El algarrobo pertenece a la familia de las leguminosas que se caracterizan por tener raíces profundas y por el auto suministro de nitrógeno, que lo incorporan, no solo a la planta, si no también al suelo.
Posee hierro, calcio, magnesio, fósforo, cinc, silicio, manganeso y cobre, destacándose por su gran contenido de potasio y bajo contenido de sodio.
La composición de la harina de algarroba se destaca la presencia de más del 60% de azúcares naturales (fructuosa, glucosa, maltosa y sacarosa).
La algarroba tiene un 12% de proteínas, en cuanto a vitaminas, tiene buena presencia de A, B1, B2, B3, C y D.
Además no posee gluten (es apta para celíacos) y posee pocas grasas (3%), pero de excelente calidad.
